⚡ 460 kcal💪 38g Protein🌾 50g Carbs🫒 11g Fat🌿 4g Fiber
⏱ Prep: 10 min🍳 Cook: 25 min

Ingredients

  • 45g Arborio or short-grain rice
  • 130g Skinless chicken breast fillet
  • 100g Mixed wild mushrooms (cremini, shiitake), sliced
  • 250ml Warm low-sodium chicken broth
  • 1/2 Yellow onion, minced
  • 1 Clove garlic, minced
  • 10g Parmigiano-Reggiano, freshly grated
  • 5ml Extra virgin olive oil
  • Fresh thyme and parsley, sea salt, black pepper

Instructions

  1. Heat oil in a saucepan. Sauté onion and garlic 2 min. Add rice and stir for 1 min to coat in oil.
  2. Add warm broth one ladle at a time, stirring continuously, waiting for each ladle to be absorbed (~18 min total).
  3. Meanwhile, season and sear chicken fillet in a separate pan 6–7 min until golden and cooked through.
  4. Stir wild mushrooms into the risotto in the final 5 minutes of cooking.
  5. Remove from heat, fold in grated parmesan. Plate creamy risotto and top with the sliced chicken fillet.
🔬 Nutritionist Note: The continuous stirring of risotto releases amylopectin starch, creating a naturally creamy sauce without heavy cream.
