  • 110g Wild salmon fillet, skinned & cubed
  • 50g Light Greek yogurt or light culinary cream (10%)
  • 40g Baby spinach leaves

  • 5ml Extra virgin olive oil
  • Zest of 1/2 organic lemon
  • Fresh dill, sea salt, black pepper

Instructions

  1. Boil pasta in salted water until al dente (9–10 min). Reserve 3 tbsp pasta water.
  2. Heat olive oil in a skillet over medium heat. Sear salmon cubes for 3 minutes until lightly browned on all sides.
  3. Add grated garlic and baby spinach; stir until spinach wilts (1 min).
  4. Turn heat to lowest setting. Stir in Greek yogurt, reserved warm pasta water, and lemon zest.
  5. Toss drained hot pasta into the skillet, coating every noodle in the creamy salmon sauce. Garnish with dill.
